Ottima ricetta per tenersi in forma, dopo un #allenamento. Perfetta se accompagnata con ceci cotti in friggitrice ad aria e crostini di pane.
Ingredients
- Chickpea flour50 g
- Zucchini3 u (600 g)
- Grana Padano2 tablespoons
- Eggs2 u (120 g)
- Garlic1 clove
- Red onion1 u (150 g)
- Vegetable oilto taste
- Black pepperto taste
- Fine saltto taste
- Parsleyto taste
Procedure
0. Wash the zucchini thoroughly and remove the ends. Grate the zucchini with a coarse grater. Place the grated zucchini in a colander, sprinkle with a pinch of salt, and let sit for about 10 minutes to release the excess water.
1. After 10 minutes, squeeze the courgettes well with your hands or a clean cloth to remove as much water as possible.
2. In a large bowl, beat the eggs. Add the grated zucchini, whole wheat or chickpea flour, Parmesan cheese (if using), minced garlic, chopped onion, and parsley.
3. Season with salt and pepper to taste. Mix well until smooth. The dough should be thick but still slightly moist. If it's too wet, add a little more flour.
4. Heat a nonstick pan over medium heat and lightly brush it with extra virgin olive oil. Once hot, drop spoonfuls of the batter into the pan, flattening them slightly with the back of the spoon to form small pancakes.
5. Cook the fritters for about 3-4 minutes per side, or until golden and crispy. Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
