Prova le barchette di zucchine, gustose zucchine farcite e gratinate, perfette come antipasto leggero o contorno saporito. Una ricetta semplice e versatile.
Ingredients
- Zucchini1 Kg
- Gluten-free breadcrumbs400 g
- Cheese200 g
- Vegetable cooking cream100 g
- Black olives50 g
- Grana Padano4 tablespoons
- Capers in salt2 tablespoons
- Extra virgin olive oilto taste
Procedure
0. Prepare the zucchini by trimming the ends. Since they must be cooked with their skins on, they must be organic.
1. In a tall pot of hot water, cook the whole zucchini for about ten minutes, or until they're tender enough to pierce with a fork. In a small saucepan, boil two eggs. They should be hard-boiled in eight minutes. Once cooked, remove them from the water and let them cool.
2. Remove them from the water, place them on a large plate, and let them cool. When they're safe to handle, cut them in half and, using a knife, scoop out the inner pulp. Place the pulp in a bowl with the other ingredients.
3. Add the chopped olives, washed and drained salted capers, sliced hard-boiled eggs, shredded cheese, grated Parmesan cheese, and a drizzle of olive oil to the zucchini. No need to add salt. Use an immersion blender to puree any larger pieces.
4. Spoon the mixture into each zucchini halves and arrange them on a baking sheet lined with parchment paper. Finally, drizzle a thin strip of non-dairy cooking cream over each zucchini. I used gluten-free coconut cream.
5. Bake in a preheated oven at 175 degrees for 15 minutes or until the top layer is no longer crispy. Serve.
