Ingredients
- Chicken breast500 g
- Sake10 ml
- Soy sauce2 tablespoons
- Brown sugar2 tablespoons
- Granulated sugar1 tablespoon
- Cornstarch (Maizena)1 teaspoon
- Mirin1 glass
Procedure
0. Prepare the marinade: In a bowl, whisk together the soy sauce, mirin, sake, and brown sugar until the sugar has completely dissolved. Add the chicken pieces to the marinade and marinate in the refrigerator for at least 30 minutes, but preferably 1-2 hours for a more intense flavor.
1. Make the teriyaki sauce (optional): In a small saucepan, combine the soy sauce, mirin, and sugar. Bring to a boil, then reduce the heat and add the cornstarch dissolved in a teaspoon of water. Cook the sauce until slightly thickened, stirring constantly. Remove from the heat and set aside.
2. Prepare the skewers: If using wooden skewers, soak them in water for at least 30 minutes before use to prevent them from burning during cooking. Thread the marinated chicken pieces onto the skewers.
3. Grill the skewers: Heat the grill to medium-high heat. Once the grill is hot, place the chicken skewers on the grill and cook for about 5-7 minutes per side, or until golden brown and cooked through.
4. While cooking, you can brush the skewers with the remaining marinade for extra flavor. If you'd like to use teriyaki sauce, brush the skewers with it during the last few minutes of cooking and serve the remaining teriyaki sauce as a dipping sauce.
5. Once cooked, serve the Yakitori hot and enjoy them as an appetizer or as a main course, perhaps accompanied by rice and grilled vegetables.
