Un piatto ricco di tradizione e comfort, i wonton in brodo offrono un equilibrio perfetto tra sapori delicati e intensi. I ravioli morbidi e saporiti, ripieni di carne di maiale e gamberi, si sposano perfettamente con il brodo caldo, leggero e aromatizzato con salsa di soia e olio di sesamo. La freschezza dei cipollotti e la leggerezza del brodo rendono questo piatto perfetto per una giornata fredda o come comfort food. Ingredients
- Chicken broth1 L
- Type 00 flour200 g
- Sausage meat200 g
- Prawns100 g
- Water80 ml
- Spring onion50 g
- White wine25 ml
- Soy sauce2 tablespoons
- Sesame oil2 teaspoons
- Eggs1 u (60 g)
- Ginger1 teaspoon
- Fine salt1 teaspoon
- Garlic1 clove
- Cornstarch (Maizena)to taste
- Sesame seedsto taste
Procedure
0. In a bowl, combine 200g of flour and a pinch of salt. Gradually add 1 egg and 80-100ml of water, kneading until the dough is soft but firm. If the dough is too dry, add more water, a tablespoon at a time.
1. Transfer the dough to a floured surface and knead it for about 10 minutes, until it becomes smooth and elastic.
2. Wrap the dough in cling film and let it rest for 30 minutes.
3. After resting, divide the dough into small pieces. Roll out each piece on a surface dusted with cornstarch, using a rolling pin. You should obtain very thin sheets (about 1 mm thick). Cut into squares about 8-10 cm on a side. Dust each sheet with a little cornstarch to prevent them from sticking together.
4. In a bowl, combine 200g minced pork, 100g chopped prawns, 2 chopped spring onions, 1 minced garlic clove, 1 tablespoon soy sauce, 1 teaspoon sesame oil, 1 teaspoon grated ginger, and salt and pepper to taste. Mix all the ingredients well until smooth.
5. Take a homemade wonton wrapper and place 1 teaspoon of filling in the center. Moisten the edges of the wrapper with water, fold it in half to form a triangle, and seal the edges tightly, pressing to remove any air.
6. Bring the bottom corners of the triangle together toward the center to form the classic wonton shape. Repeat with the remaining dough.
7. Bring a pot of water to a boil and cook the wontons for 4-5 minutes, until they rise to the surface. You can also steam them for 8-10 minutes.
8. In a saucepan, heat 1 liter of chicken broth. Add 2 tablespoons of soy sauce, 1 tablespoon of rice wine (if using), and 1 teaspoon of sesame oil. Bring to a gentle boil and simmer for 5 minutes.
9. Once the wontons are cooked, transfer them to bowls and pour the hot broth over them. Garnish with sliced fresh spring onions and, if desired, a sprinkle of sesame seeds. Serve the wontons piping hot in the broth, accompanied by chopsticks and a spoon.
