Otterrai una ciambella rustica ma elegante, con un topping cotto che si fonde nella superficie formando una crosticina morbida e golosa, leggermente caramellata grazie al cioccolato e alle nocciole.
Ingredients
- Whole wheat flour250 g
- Soy milk170 ml
- Whole cane sugar120 g
- Sunflower oil100 ml
- Dark chocolate60 g
- Raspberry40 g
- Blueberries40 g
- Hazelnuts30 g
- Baking powder16 g
- Eggs3 u (180 g)
- Vanilla extract1 teaspoon
- Fine saltto taste
Procedure
0. In a bowl, whisk the eggs, sugar, and salt until pale. Add the oil and milk. Stir in the sifted flour and baking powder, then the vanilla or zest. Pour the mixture into the previously oiled and floured mold.
1. Distribute the red fruits over the surface, pressing them slightly into the batter. Add the dark chocolate chips evenly. Sprinkle with chopped hazelnuts.
2. Bake in a preheated oven at 175°C (350°F) for 40-45 minutes, checking with a toothpick in the center. Let cool completely before unmolding.
3. Want to go all out? Add a pinch of Maldon salt or a drizzle of honey after baking, while still warm, for an even more interesting contrast.
