  • 0. Finely chop the celery, carrot, and onion. Sauté the onion with a drizzle of oil and a dozen finely chopped sage leaves for a couple of minutes. Once it begins to become translucent, add the celery and carrots. Sauté for about ten minutes with a pinch of salt, and meanwhile, roughly chop the walnuts. Add them to the sauté and continue cooking for 10 minutes.
  • 1. Clean the pumpkin and dice it into small cubes, which you'll then add to the pot. Cook the ragù for another 15 minutes, or until the pumpkin is tender but not mushy, adding a ladle of vegetable broth to aid cooking.
  • 2. Fry the remaining sage leaves in a little oil until crispy and set aside. Meanwhile, boil the spaghetti in plenty of salted water, drain al dente, and toss in the pan with the sauce. Serve piping hot, garnishing each portion with the fried sage leaves.
