Ingredients
- Whole wheat flour350 g
- Water250 ml
- Type 00 flour150 g
- Dry yeast7 g
- Extra virgin olive oil2 tablespoons
- Fine salt2 teaspoons
- Apple cider vinegar1 tablespoon
- Granulated sugar1 teaspoon
- Flaxseedsto taste
- Poppy seedsto taste
Procedure
0. In a large bowl, combine the flours and salt. In another bowl, dissolve the dry yeast and sugar in the warm water. Let sit for 5–10 minutes until foamy.
1. Add the dissolved yeast to the flour mixture, along with the olive oil and apple cider vinegar. Mix until smooth. Transfer the dough to a lightly floured surface and knead for 8-10 minutes, until elastic and smooth. Add a little more flour if necessary (but not too much).
2. Shape the dough into a ball and place it in an oiled bowl. Cover with a damp cloth and let it rise in a warm place for about 1–1.5 hours, until doubled in size.
3. Take the dough and divide it into 8 equal pieces. Shape into balls and, using your finger, make a hole in the center of each, forming the classic donut shape. Gently stretch them with your hands to obtain a more uniform shape.
4. Place the bagels on a baking sheet lined with parchment paper, cover with a cloth and let rise for 30 minutes.
5. Bring 2 liters of water to a boil in a large pot with 1 tablespoon of sugar and 1 teaspoon of salt. Once the water begins to boil, reduce the heat to medium-high and add the bagels, a few at a time.
6. Cook each bagel for 1–2 minutes per side. The longer you cook the bagels, the crispier the crust will be. Remove them with a slotted spoon and transfer them to a baking sheet lined with parchment paper.
7. Preheat the oven to 220°C. Brush the bagels with a little water and sprinkle with poppy seeds and flaxseeds. Bake for 20-25 minutes, until golden and crispy.
8. Let cool on a wire rack for a few minutes before serving.
9. You can fill them with avocado, hummus, cream cheese, or sliced veggies, or for a sweeter taste, with peanut butter and jam. These bagels are also perfect on their own, with a cup of tea or coffee.
