  • 0. In a large bowl, combine the flours and salt. In another bowl, dissolve the dry yeast and sugar in the warm water. Let sit for 5–10 minutes until foamy.
  • 1. Add the dissolved yeast to the flour mixture, along with the olive oil and apple cider vinegar. Mix until smooth. Transfer the dough to a lightly floured surface and knead for 8-10 minutes, until elastic and smooth. Add a little more flour if necessary (but not too much).
  • 2. Shape the dough into a ball and place it in an oiled bowl. Cover with a damp cloth and let it rise in a warm place for about 1–1.5 hours, until doubled in size.
  • 3. Take the dough and divide it into 8 equal pieces. Shape into balls and, using your finger, make a hole in the center of each, forming the classic donut shape. Gently stretch them with your hands to obtain a more uniform shape.
  • 4. Place the bagels on a baking sheet lined with parchment paper, cover with a cloth and let rise for 30 minutes.
  • 5. Bring 2 liters of water to a boil in a large pot with 1 tablespoon of sugar and 1 teaspoon of salt. Once the water begins to boil, reduce the heat to medium-high and add the bagels, a few at a time.
  • 6. Cook each bagel for 1–2 minutes per side. The longer you cook the bagels, the crispier the crust will be. Remove them with a slotted spoon and transfer them to a baking sheet lined with parchment paper.
  • 7. Preheat the oven to 220°C. Brush the bagels with a little water and sprinkle with poppy seeds and flaxseeds. Bake for 20-25 minutes, until golden and crispy.
  • 8. Let cool on a wire rack for a few minutes before serving.
  • 9. You can fill them with avocado, hummus, cream cheese, or sliced veggies, or for a sweeter taste, with peanut butter and jam. These bagels are also perfect on their own, with a cup of tea or coffee.
