Ingredients
- Carrots200 g
- Thai rice (or Jasmine)100 g
- Celery50 g
- Cashews20 g
- Nori seaweed2 sheets
- Eggs2 u (120 g)
- Soy sauceto taste
- Extra virgin olive oilto taste
Procedure
0. Cook rice the traditional way. I like rice that doesn't overcook, so I used Thai long grain rice.
1. Continue with the zucchini. Cut it into julienne strips and add it to the carrots and celery. Meanwhile, in a small saucepan, boil the eggs until hard-boiled.
2. When the rice is cool enough to handle by hand, season it with a spoonful of soy sauce and a spoonful of grated vegan cashew and almond mixture.
3. Take the sushi seaweed sheet and sprinkle the rice over the first half. Add the carrots, celery, zucchini, and chopped hard-boiled egg.
4. Roll the nori sheet, ensuring it adheres well to the ingredients. Form a small roll. Using a serrated knife, cut the roll into several pieces.
5. I remember that it is recommended to eat only one sheet of seaweed per person per day because seaweed is rich in iodine.
