Le polpettine vegetariane sono sfiziose e leggere, realizzate con verdure, legumi e spezie, perfette come antipasto o secondo piatto sano e gustoso.
Ingredients
- Bell pepper200 g
- Zucchini200 g
- White bread150 g
- Parmigiano Reggiano DOP100 g
- Parsley2 tablespoons
- Eggs1 u (60 g)
- Extra virgin olive oilto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Wash the zucchini and peppers. Dice the zucchini and the peppers. Place the zucchini and peppers in a pan with a drizzle of oil and a pinch of salt, and cook for about 5-7 minutes until softened. Let cool.
1. In a large bowl, place the chopped stale bread (or breadcrumbs), cooked vegetables, grated cheese, egg, parsley, garlic, salt and pepper.
2. Mix all the ingredients until smooth. If necessary, add a little breadcrumbs to achieve the desired consistency for forming meatballs. Form the mixture into small meatballs, pressing firmly to form them.
3. Preheat the air fryer to 200°C. Brush the meatballs with a little extra virgin olive oil and place them in the air fryer basket. Make sure they don't touch each other to ensure even cooking.
4. Bake for about 15 minutes or until golden and crispy, turning them halfway through to ensure they brown evenly.
5. Tips: You can add other herbs like basil or mint to vary the flavor of the meatballs. Serve the meatballs with a sauce of your choice, such as tzatziki, yogurt sauce, or fresh tomato sauce for an extra touch of freshness.
