Zuppa di verdure e legumi: un comfort food ricco e salutare, dove ogni cucchiaio racconta storie di benessere e tradizione contadina.
Ingredients
- Borlotti beans (precooked)240 g
- White bread150 g
- Carrots100 g
- Golden onion100 g
- Celery100 g
- Bouillon cubeto taste
- Fine saltto taste
- Extra virgin olive oilto taste
Procedure
0. Dice the onions, carrots and celery
1. Sauté with a drizzle of extra virgin olive oil for 5 minutes. Meanwhile, prepare the broth by dissolving a little stock cube in a small saucepan with water.
2. Add the spinach (frozen is fine too). Wilt it, adding the previously prepared broth.
3. Drain and rinse the beans and add them with more broth. Then let them cook for about twenty minutes.
4. Meanwhile, cut the bread into cubes and toast it in a pan with a drizzle of extra virgin olive oil and a pinch of salt.
5. Serve the soup hot, placing the croutons on top.
