  • 0. Dissolve the yeast and sugar in the warm water. Let it sit for 5 minutes until it foams slightly.
  • 1. In a bowl, combine the flour and salt. Gradually pour in the water and yeast and knead for about 8-10 minutes until the dough becomes smooth and elastic.
  • 2. Cover the dough with a cloth and let it rise for about 1 hour in a warm place, until doubled in volume.
  • 3. Heat the oil in a pan and sauté the finely chopped onion and garlic. Add the washed and roughly chopped spinach. Cook for 3-4 minutes until wilted.
  • 4. Season with salt, pepper, and a pinch of nutmeg. Turn off the heat and let cool. Stir in the crumbled tofu or grated vegan cheese.
  • 5. Preheat the oven to 200°C. Divide the dough into 4 pieces and roll them out into thin ovals. Spread the filling in the center, leaving the edges free.
  • 6. Fold the sides toward the center, pinching the ends to form the classic elongated pide shape. Lightly brush the edges with olive oil and, if desired, sprinkle with sesame seeds. Bake for about 15-18 minutes, until the dough is golden and crispy.
  • 7. Serve the pide hot, accompanied by a vegetable yogurt dip or hummus.
