  • 0. Place the soy sauce, mirin, sugar, vinegar, garlic, and ginger in a saucepan. Reduce over medium heat until syrupy (10-15 minutes). Strain and set aside.
  • 1. Rub the beef with a drizzle of teriyaki sauce and leave it covered in the refrigerator for 30 minutes.
  • 2. Thinly slice the sweet potato using a mandolin. Arrange the slices in a circle, overlapping each other, on a baking sheet lined with parchment paper, creating a "rose" shape. Season with EVOO, salt, pepper, and thyme. Bake at 180°C for 25–30 minutes, until golden and crispy around the edges.
  • 3. Julienne the green part of the leek. Lightly dust with rice flour. Fry in hot oil at 170°C until golden brown, draining on paper towels.
  • 4. Bring the beef to room temperature, pat dry, and sear in a very hot pan with grapeseed oil, 2–3 minutes per side for medium rare. Brush with the teriyaki glaze and let rest for 5 minutes. Slice with a sharp knife.
  • 5. Arrange two slices of meat side by side, glossy with glaze. Create a sweet potato rose next to it. On top of the rose, add a handful of crispy leeks to create volume and verticality. Finish with flaked salt on the meat and, if desired, a touch of grated lime zest.
