  • 0. Heat plenty of vegetable oil in a deep pan until it reaches a temperature of about 170-180°C
  • 1. Meanwhile, prepare the tempura batter. In a large bowl, mix the tempura flour with the cold water until you get a smooth batter. Don't overmix; a few lumps are fine.
  • 2. Gently dip the shrimp tails into the tempura batter, making sure to coat them evenly.
  • 3. Once the oil is hot, fry the shrimp in small batches to avoid lowering the oil temperature too much. Cook the shrimp for 2-3 minutes, or until golden and crispy. Use a slotted spoon to remove the shrimp from the pan and place them on a plate lined with paper towels to drain excess oil.
  • 4. Repeat the process with the remaining shrimp. Season with salt, if necessary, and serve the tempura shrimp hot, perhaps accompanied with lemon wedges.
