  • 0. In a bowl or stand mixer, combine the flour, powdered sugar, salt, and lemon zest. Add the cold butter and quickly knead the dough with your hands or a paddle attachment. Add the egg and knead briefly until smooth. Flatten, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • 1. Roll out the pastry to 3–4 mm and line the pan. Prick the bottom with a fork. Bake blind at 180°C for 20–25 minutes (with weights), then remove the weights and bake for another 5 minutes. Cool completely.
  • 2. In a bowl, whisk together the cream cheese, mascarpone, powdered sugar, and vanilla until smooth and silky. Add the cream and whip lightly to aerate the texture. It should be creamy but firm. Refrigerate until ready to assemble.
  • 3. Cut the figs into wedges without peeling them. Heat a pan with the brown sugar and a knob of butter. When the sugar begins to melt, add the figs and a squeeze of lemon juice. Caramelize for 2–3 minutes over medium heat, until glossy and slightly softened. Let cool.
  • 4. Pour the pure white cream onto the cooled shortcrust pastry base. Level with a spatula. Arrange the caramelized figs in a dramatic pattern, alternating with fresh blueberries. Garnish with mint leaves or a dusting of powdered sugar for a show-stopping finishing touch.
  • 5. For an even more elegant effect, you can glaze the fruit with hot neutral gelatin or finish with a reduction of balsamic vinegar with honey in small drops.
