Scopri la ricetta delle polpette di manzo al #dragoncello, un secondo piatto dal sapore unico e aromatico. Ingredients
- Ground beef400 g
- Tomato puree350 ml
- White wine100 ml
- Breadcrumbs2 tablespoons
- Garlic2 cloves
- Eggs1 u (60 g)
- Golden onion1 u (150 g)
- Granulated sugar1 teaspoon
- Tarragon1 tablespoon
- Black pepperto taste
- Fine saltto taste
- Nutmegto taste
Procedure
0. In a bowl, combine the ground beef with the egg, breadcrumbs, Parmesan cheese, tarragon, minced garlic, salt, pepper, and nutmeg. Mix until smooth. If it's too soft, add a little more breadcrumbs; if it's too dry, add a splash of milk.
1. Shape the mixture into meatballs about the size of a walnut and let them rest in the refrigerator for 15-20 minutes.
2. In a large skillet, heat the oil and sauté the chopped onion with the whole garlic. After a couple of minutes, add the white wine and let the alcohol evaporate.
3. Add the tomato puree, tarragon, a pinch of sugar (to balance the acidity of the tomatoes), salt, and pepper. Cover and simmer over low heat for 15 minutes, stirring occasionally.
4. Heat a drizzle of oil in a pan and sear the meatballs over medium-high heat until golden brown on all sides. They don't need to cook through, just seal on the outside.
5. Transfer the meatballs to the tomato sauce and cook over low heat for 30 minutes, covered. Gently turn them occasionally. Taste and season with salt and pepper if necessary.
