  • 0. In a bowl, combine the ground beef with the egg, breadcrumbs, Parmesan cheese, tarragon, minced garlic, salt, pepper, and nutmeg. Mix until smooth. If it's too soft, add a little more breadcrumbs; if it's too dry, add a splash of milk.
  • 1. Shape the mixture into meatballs about the size of a walnut and let them rest in the refrigerator for 15-20 minutes.
  • 2. In a large skillet, heat the oil and sauté the chopped onion with the whole garlic. After a couple of minutes, add the white wine and let the alcohol evaporate.
  • 3. Add the tomato puree, tarragon, a pinch of sugar (to balance the acidity of the tomatoes), salt, and pepper. Cover and simmer over low heat for 15 minutes, stirring occasionally.
  • 4. Heat a drizzle of oil in a pan and sear the meatballs over medium-high heat until golden brown on all sides. They don't need to cook through, just seal on the outside.
  • 5. Transfer the meatballs to the tomato sauce and cook over low heat for 30 minutes, covered. Gently turn them occasionally. Taste and season with salt and pepper if necessary.
