  • 0. To make tagliatelle with truffle, you must first bring plenty of salted water to the boil.
  • 1. Now take the truffle and, using a small brush, clean it of any dirt. Then, chop it finely, either with a knife or using a food processor.
  • 2. In a wok, melt the 50 g of butter, add the previously chopped truffle and sauté for a few minutes.
  • 3. Add the pasta to boiling water, and as soon as it drapes, drain it using kitchen tongs and pour it into the wok with the truffle, adding 3 ladles of the cooking water. Continue stirring and adding cooking water until the pasta is cooked to your desired consistency. Stir in the grated Parmesan cheese. Serve your tagliatelle with truffle piping hot and smooth, freshly ground pepper. Garnish with a few truffle leaves to garnish.
