  • 0. Start by chopping both the cilantro and mint, rinsing them under cold running water and draining them well. Wash, clean and dice the cucumbers, onion and tomatoes.
  • 1. Place the bulgur in a large bowl, add water, and let it soak for about 5 minutes to absorb some of the moisture. Drain carefully, transfer it to a large bowl, and add the parsley, mint, onion, tomatoes, and cucumbers.
  • 2. Add the lemon juice, crumbled feta, a drizzle of extra virgin olive oil, and a pinch of salt, and stir to combine. Serve the tabbouleh.
