  • 0. Prepare the dough: Place the flour in a mound on a clean work surface. Crack the eggs into the center and add a pinch of salt. Using a fork, begin beating the eggs, gradually incorporating the flour until a dough forms. Knead the dough vigorously with your hands until it becomes smooth and elastic. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • 1. Prepare the filling: In a bowl, mix the jam and cream cheese until smooth. Taste and add powdered sugar if you prefer a sweeter filling.
  • 2. Roll out the dough using a pasta machine or a hammer and cut out discs. Dust with flour to prevent the discs from sticking. Fill the discs and seal them by overlapping the dough as shown in the image.
  • 3. Bring a pot of lightly salted water to a boil. Cook the ravioli in boiling water for about 3-4 minutes, or until they float to the surface and the pasta is cooked.
