Una variante estiva del classico minestrone.
Ingredients
- Pearl barley280 g
- Zucchini2 u (400 g)
- Bell pepper2 u (440 g)
- Extra virgin olive oil2 tablespoons
- New potatoes2 u (150 g)
- Golden onion1 u (150 g)
- Balsamic vinegarto taste
- Fine saltto taste
- Black pepperto taste
Procedure
0. Start by peeling the potatoes and dicing them. Clean the zucchini, onion, and bell pepper. Finely chop the onion and dice the zucchini and bell pepper.
1. Bring a small pot of salted water to a boil. Add the diced potatoes and cook for about 10 minutes. Then drain and set aside.
2. In a nonstick pan, heat a drizzle of oil and cook the onion, peppers, and zucchini over medium heat for about 15 minutes. In a small saucepan, cook the farro according to the package directions.
3. Once cooked, combine all the ingredients and add a little balsamic vinegar.
