Ecco la ricetta per preparare i Yaprak Dolma, un piatto tradizionale della cucina turca composto da foglie di vite ripiene di un delizioso ripieno di riso e carne
Ingredients
- Ground beef200 g
- Basmati rice200 g
- Pickled vine leaves8 u (32 g)
- Yellow potatoes2 u (400 g)
- Extra virgin olive oil2 tablespoons
- Golden onion1 u (150 g)
- Parsley1 teaspoon
- Sweet paprika1 teaspoon
- Mintto taste
- Waterto taste

Procedure
0. Prepare the filling: In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes. Add the ground beef to the skillet and cook until golden brown, breaking it up with a spatula to ensure there are no lumps.
1. Add the rice to the meat and stir well to distribute it evenly. Add the dried mint, chopped fresh parsley, sweet paprika, salt, and black pepper. Stir well and cook for another 2-3 minutes. Remove from the heat and let the filling cool.
2. Prepare the grape leaves: Rinse the brined grape leaves thoroughly under cold running water to remove excess salt and drain. Trim the large stems from the leaves.
3. Prepare the bottom of the pot: Arrange the potato slices evenly across the bottom of a large pot. This will prevent the dolma from sticking to the bottom of the pot while cooking.
4. Prepare the dolma: Take a grapevine leaf and place it on your work surface, smooth side down and ridged side up. Place a small amount of the filling on the underside of the leaf, near the stem. Gently roll the leaf around the filling, folding the sides inward to seal the filling.
5. Place the rolled dolmas in the pot on top of the potato slices, making sure to arrange them evenly. Once you've finished stuffing all the grape leaves and placed the dolmas in the pot, squeeze the lemon juice over the dolmas and add enough water to completely cover them.
6. Place a plate or lid slightly smaller than the dolmas on top of the pot to hold them down while cooking. This will help prevent them from opening during cooking.
7. Cover the pot with a lid and bring the water to a boil. Reduce the heat and simmer over medium-low heat for about 45-60 minutes, or until the rice is fully cooked and the dolmas are tender. Once cooked, carefully remove the dolmas from the pot and serve hot, perhaps accompanied with Greek yogurt and lemon wedges.
