Procedure
0. Wash and dry the strawberries thoroughly. Cut about half into thin slices to decorate the sides of the cup. Chop the remaining strawberries and place them in a bowl with 1 tablespoon of sugar and the lemon juice. Let them macerate for about 15-20 minutes in the refrigerator.
1. In a bowl, whisk the egg yolks and sugar until light and fluffy.
2. Add the mascarpone and mix gently until you obtain a smooth cream.
3. Whip the cream until stiff and gently fold it into the mascarpone mixture using bottom-up movements to avoid deflating the mixture.
4. Prepare the bowls or glasses in which to serve the dessert. Arrange the strawberry slices along the edges of the bowls, cut side outward.
5. Crumble the cookies and sprinkle some on the bottom of each cup. Top the cookies with a spoonful of macerated strawberries. Pour a layer of mascarpone cream over the strawberries. Repeat the process with a layer of cookies, strawberries, and cream until the cups are filled.
6. Finely crumble a few biscuits (or amaretti) and sprinkle them over the top of each cup. Garnish with a whole strawberry in the center of each cup.
7. Leave to rest in the refrigerator for at least 2-3 hours before serving, so that the dessert sets well and the flavors blend together.
8. You can add liqueur (optional) to the strawberry maceration for a more pronounced flavor. You can vary the amount of sugar depending on the sweetness of the strawberries.
