  • 0. Dissolve the yeast in the lukewarm milk together with a teaspoon of sugar and let it rest for about 10 minutes, until bubbles form on the surface.
  • 1. In a large bowl, combine the flour, sugar, salt, cinnamon, and nutmeg. Add the softened butter and eggs. Pour in the milk and yeast and begin kneading until the dough becomes soft and smooth.
  • 2. Add the raisins, candied orange peel, and almonds to the dough. Continue kneading until the ingredients are evenly distributed.
  • 3. Cover the dough with a cloth and let it rise in a warm place for about 1 hour, or until doubled in volume.
  • 4. Once risen, roll out the dough on a floured surface. If using marzipan, shape it into a cylinder and place it in the center of the rolled out dough. Then fold the sides of the dough over the marzipan, forming a sort of roll.
  • 5. Place the stollen on a baking tray lined with baking paper and let it rise for another 30 minutes.
  • 6. Preheat the oven to 180°C and bake the stollen for about 40-45 minutes, until golden brown on top.
  • 7. Stollen keeps well for several days, and many say that it becomes even better as time passes, when the flavors blend even better.
