Totani e patate saporiti, un secondo piatto di mare ricco e gustoso, semplice da preparare e perfetto per ogni occasione.
Ingredients
- Squid1.2 Kg
- Yellow potatoes800 g
- Tomato puree400 ml
- White wine100 ml
- Garlic1 clove
- Extra virgin olive oilto taste
- Black pepperto taste
- Fine saltto taste
- Parsleyto taste
Procedure
0. Start by cleaning the squid: cut the body into rings and the tentacles into small pieces and rinse under running water. Drain well. Heat about six tablespoons of oil in a large saucepan and sauté the minced garlic (or whole). Add the squid, cook for a couple of minutes over high heat, then add the wine.
1. Add the tomato puree and cook for about 15-20 minutes over medium heat, covered. Then add the diced potatoes, season lightly with salt and pepper, and continue cooking for another 15 minutes, covered, leaving a small vent.
2. Toward the end of cooking, check the squid and, if the sauce is too thin, finish cooking with the lid off. Remove from the heat, sprinkle the squid and potatoes with parsley, let rest for 5 minutes, then serve.
