  • 0. Wash the fresh spinach and drain it. In a large skillet, heat 1 tablespoon of extra virgin olive oil and add the garlic, sautéing until lightly browned. Add the spinach and cook over medium heat for 3-4 minutes, until wilted. Remove the garlic and set the spinach aside to cool.
  • 1. In a large bowl, beat the eggs with a fork or whisk, adding salt, pepper, and a pinch of nutmeg. Add the grated ricotta salata and mix well.
  • 2. Once the spinach has cooled slightly, coarsely chop it and add it to the egg and ricotta mixture. Stir to distribute the ingredients evenly.
  • 3. In the same pan, add another tablespoon of extra virgin olive oil. Pour the egg and spinach mixture into the pan and cook over medium-low heat for about 6-8 minutes, until the base is set.
  • 4. Using a plate or lid, flip the omelette and cook on the other side for another 4-5 minutes, until golden brown and cooked through in the center.
  • 5. Remove the frittata from the heat and let it rest for a few minutes before slicing. You can serve it warm or at room temperature.
