La frittata di spinaci freschi e ricotta salata è un piatto semplice e genuino, perfetto per un pranzo leggero o una cena veloce. Ingredients
- Fresh spinach200 g
- Salted ricotta40 g
- Eggs4 u (240 g)
- Extra virgin olive oil1 tablespoon
- Garlic1 clove
- Black pepperto taste

Procedure
0. Wash the fresh spinach and drain it. In a large skillet, heat 1 tablespoon of extra virgin olive oil and add the garlic, sautéing until lightly browned. Add the spinach and cook over medium heat for 3-4 minutes, until wilted. Remove the garlic and set the spinach aside to cool.
1. In a large bowl, beat the eggs with a fork or whisk, adding salt, pepper, and a pinch of nutmeg. Add the grated ricotta salata and mix well.
2. Once the spinach has cooled slightly, coarsely chop it and add it to the egg and ricotta mixture. Stir to distribute the ingredients evenly.
3. In the same pan, add another tablespoon of extra virgin olive oil. Pour the egg and spinach mixture into the pan and cook over medium-low heat for about 6-8 minutes, until the base is set.
4. Using a plate or lid, flip the omelette and cook on the other side for another 4-5 minutes, until golden brown and cooked through in the center.
5. Remove the frittata from the heat and let it rest for a few minutes before slicing. You can serve it warm or at room temperature.
