  • 0. Bring a pot of salted water to a boil and cook the pasta al dente according to the instructions on the package.
  • 1. In a large skillet, heat the extra virgin olive oil and sauté the finely minced garlic. Add the fresh (or thawed) spinach and cook over medium heat for 5-7 minutes, until wilted and soft. Season with salt and pepper, and, if you like, add a pinch of chili pepper for a spicy kick.
  • 2. Dice the feta or crumble it with your hands and set aside. Blend the spinach with the feta and garlic.
  • 3. Drain the pasta al dente, reserving a little of the cooking water. Add the pasta to the spinach and toss well. If necessary, add a ladle of the cooking water.
  • 4. For a textural contrast, you can add some toasted walnuts or pine nuts to the pasta.
