  • 0. Rinse the rice under running water until the water runs clear. Cook it with the water in a covered pot over low heat for about 10 minutes, then let it rest for 5 minutes with the heat off. In a small bowl, dissolve the rice vinegar with the sugar and salt, then mix it with the hot rice.
  • 1. In a bowl, combine the mayonnaise, Sriracha, soy sauce, and sesame oil. Add the diced salmon and mix well. Sprinkle with toasted sesame seeds.
  • 2. Place the rice in a bowl. Add the spicy salmon on top. Garnish with strips of nori seaweed, chopped spring onion, and more sesame seeds.
  • 3. You can add sliced avocado for a creamier version. For a crunchier touch, try adding fried onion or tempura flakes. For more flavor, add a few drops of Japanese chili oil (rayu).
