Ingredients
- Durum wheat pasta180 g
- Fresh broad beans100 g
- Grana Padano50 g
- Anchovies in oil15 g
- Extra virgin olive oil3 tablespoons
- White onion2 u (300 g)
- Black pepperto taste
- Lemon zestto taste
- Fine saltto taste
Procedure
0. Shell the broad beans and, if they are large, blanch them for 1 minute in boiling water and remove the outer skin to obtain only the soft heart.
1. Finely slice the onions. Heat the oil in a large skillet and sauté the onions gently over low heat for at least 15-20 minutes, until soft and translucent. If necessary, add a few tablespoons of water to prevent burning.
2. Once the onions are ready, add the anchovy fillets and stir: they will slowly melt in the heat, creating a tasty cream along with the onion.
3. Meanwhile, bring a pot of salted water to a boil and cook the spaghetti al dente.
4. Drain the pasta, reserving a little of the cooking water. Add it to the pan with the onion and anchovies, along with the fava beans. Sauté everything for a minute, stirring in a splash of the cooking water and the Parmesan to create a creamy sauce that coats the pasta well.
5. Add a sprinkling of black pepper, the zest of half a lemon, and a drizzle of raw olive oil.
