Spaghetti all’assassina: un piatto pugliese dal carattere forte, con sugo piccante e crosticina croccante che conquista ogni forchettata!
Ingredients
- Tomato puree350 ml
- Water250 ml
- Durum wheat pasta200 g
- Anchovies in oil20 g
- Garlic3 cloves
- Tomato pasteto taste
- Capers in saltto taste
- Chili pepperto taste
- Green olivesto taste
- Extra virgin olive oilto taste
Procedure
0. Pour a generous drizzle of extra virgin olive oil into a large pan and, over medium-low heat, sauté the anchovies, minced garlic, capers, and olives.
1. After a few minutes, or as soon as the garlic has browned, add the tomato puree along with a little water, cover with a lid, and cook for 15-20 minutes.
2. Meanwhile, in a small saucepan, bring the water and tomato paste to a boil to create a flavored broth.
3. Place the raw spaghetti in the pan: try to mix them evenly with the sauce, taking care not to overlap them. Cook over medium heat with the lid on. The cooking time indicated on the spaghetti package should be approximately doubled.
4. After 5 minutes, stir the pasta: it will be dry, but if it's too dry, add a couple of ladles of tomato broth. Continue cooking until the pasta is cooked through.
5. Before serving, add some chilli pepper to taste and a drizzle of raw extra virgin olive oil.
