  • 0. In a small saucepan over a bain-marie or in the microwave, melt 200g dark chocolate and butter, stirring until smooth. Let cool. In a bowl, whisk the eggs, brown sugar, and granulated sugar until light and fluffy. Add the vanilla extract. Pour the melted chocolate into the bowl and stir well.
  • 1. Sift the flour, cocoa powder, baking soda, and salt. Add them to the mixture and mix until smooth. Add the dark chocolate chips (150 g) and mix until evenly distributed. Cover the dough with plastic wrap and let it rest in the refrigerator for at least 30 minutes (this will help the cookies to become softer and thicker).
  • 2. Using a spoon, scoop out portions of the dough and place them on a baking sheet lined with parchment paper, spacing them apart because they will expand during baking. Bake in a preheated oven at 175°C (350°F) for 10-12 minutes. The cookies should still be soft in the center. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.
