Ingredients
- Blueberries350 g
- Granulated sugar180 g
- Type 00 flour180 g
- Water125 ml
- Margarine85 g
- Baking powder2 tablespoons
- Eggs1 u (60 g)
- Fine saltto taste
Procedure
0. In a large bowl, beat the softened margarine with the sugar until light and fluffy. Add the egg, continuing to beat until fully incorporated. Stir in the vanilla extract (if using).
1. In another bowl, sift the flour with the baking powder and a pinch of salt. Add the dry ingredients to the butter and sugar mixture, alternating with the water or, if you prefer, milk. Begin and end with the flour, mixing gently after each addition.
2. Lightly flour the blueberries (this helps prevent them from sinking during cooking) and add them to the batter, mixing gently with a spatula.
3. Pour the batter into the prepared pan and smooth the surface. Bake in a preheated oven at 160°C (320°F) for about 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
4. Let the cake cool in the pan, then transfer it to a plate. If desired, dust the cake with powdered sugar before serving.
