  • 0. Peel the onions, taking care not to damage them. Boil them in lightly salted water for about 10 minutes, until soft but still firm. Drain and let them cool. Using a sharp knife, make a long cut on one side, but don't cut all the way through. Gently separate the layers one by one: you'll need them as "shells" for the filling. Save the inner cores of the onions for the filling, chopping them finely.
  • 1. In a bowl, combine the ground beef, rinsed and drained rice, chopped onion (including the blanched onion hearts), parsley, mint, tomato paste, spices, salt, and oil. Mix well with your hands until smooth.
  • 2. Take a layer of onions, place a small amount of filling in the center (about 1 tablespoon, but don't overdo it because the rice will swell during cooking) and roll them up gently. Arrange each stuffed onion in a high-sided casserole dish, tightly packed together with the opening facing down.
  • 3. Combine the hot broth with the tomato paste, oil, lemon juice, a pinch of salt, and pepper. Pour the liquid over the onions; they should be almost completely covered.
  • 4. Serve hot or warm, drizzled with extra virgin olive oil and, if desired, drizzled with thick yogurt and mint. The contrast between the sweetness of the onion, the richness of the filling, and the tartness of the yogurt is the essence of soğan dolması.
  • 5. ✅ Tips: You can make them ahead of time: they're even better the next day! The vegetarian version replaces the meat with cooked lentils or bulgur. If you like it spicy, add a pinch of pul biber (Turkish chili flakes).
