Il sidro di pere è una bevanda frizzante e profumata, dal gusto dolce e leggermente acidulo. Perfetto da gustare freddo come aperitivo naturale o per accompagnare piatti autunnali.

  • 0. Wash the pears thoroughly and cut them into pieces (including the peel, but remove any damaged parts or cores). Blend the pears until pureed. You can also use a juicer to extract the juice directly.
  • 1. If you blended the pears, pour the puree through cheesecloth or a fine sieve to extract the juice. Squeeze well to extract as much liquid as possible.
  • 2. Pour the pear juice into a large container (a fermenter or a large pitcher). Add the water, sugar (if necessary), and lemon juice. Stir until the sugar dissolves.
  • 3. Dissolve the yeast in a small amount of warm water and let it activate for about 10 minutes. Pour the activated yeast into the pear juice and mix well.
  • 4. Cover the container with a clean cloth or use a lid with an airlock to prevent contamination. Let it ferment at room temperature (18-22°C) for 7-10 days. During this time, you'll notice the yeast producing carbon dioxide bubbles.
  • 5. Strain the cider to remove any fruit residue and transfer it to glass bottles with airtight caps. If you want a slightly sparkling cider, add 1 teaspoon of sugar per liter of cider before bottling.
  • 6. Leave the bottles at room temperature for another 3-5 days, then transfer them to the refrigerator to stop fermentation.
  • 7. Once ready, store the cider in the refrigerator and consume it within 1-2 months.
  • 8. For a more complex aroma, you can add spices like cinnamon or cloves during fermentation. Use ripe, sweet pears for the best results. This homemade cider will be natural, slightly alcoholic (about 4-6%), and perfect enjoyed chilled!
