  • 0. In a bowl, combine the breadcrumbs, toasted pistachios, Parmesan cheese, minced garlic, parsley, and chopped pancetta. Season with a drizzle of oil, salt, and pepper. Stir until moist and fragrant. Don't skip toasting the pistachios.
  • 1. Arrange the meat slices on a flat surface, fill with a spoonful of filling and roll up tightly.
  • 2. Thread 4 rolls onto each wooden skewer. Alternate with bay leaves or onion pieces, if desired.
  • 3. Heat a drizzle of oil in a large nonstick skillet. Brown the skewers on all sides over medium heat until the pancetta is golden and crispy. Reduce the heat slightly, cover, and cook for another 5-6 minutes, adding a splash of white wine if desired. Let rest for a few minutes off the heat before serving. Serve with baked potatoes, caponata, or a simple fennel and orange salad. They're also excellent at room temperature as a rustic appetizer or Sicilian aperitif.
