Ingredients
- Beef topside600 g
- White wine100 ml
- Ground beef100 g
- Cheese80 g
- Breadcrumbs20 g
- Tomato paste15 g
- Eggs2 u (120 g)
- Parsleyto taste
- Black pepperto taste
- Nutmegto taste
- Rosemaryto taste
- Extra virgin olive oilto taste
- Fine saltto taste
Procedure
0. Mix the minced meat with the beaten eggs, nutmeg, breadcrumbs, chopped Ragusano cheese, and chopped rosemary and parsley. Spread the mixture over the 4 slices of meat. Roll them up tightly and secure with kitchen twine or wooden toothpicks, forming a small parcel.
1. In a large skillet, heat two tablespoons of extra virgin olive oil, add the onion and a sprig of rosemary. Brown the meat, pour in the wine, and let it evaporate. Dilute the tomato paste with hot water and pour it into the pan to baste and flavor the chops. Cook for about 30-35 minutes.
2. Cut into slices, after removing the wooden skewers, and serve immediately.
