Le cassatelle siciliane sono dolci tipici della tradizione, soprattutto nella zona di Trapani. Sono fagottini di pasta frolla ripieni di una crema dolce di ricotta, zucchero e cioccolato.
Ingredients
- Type 00 flour500 g
- Granulated sugar400 g
- Butter200 g
- Dark chocolate100 g
- Eggs2 u (120 g)
- Baking powder1 teaspoon
- Lemon zestto taste
- Orange zestto taste
- Vegetable oilto taste
- Ground cinnamonto taste
Procedure
0. In a large bowl, combine the flour, sugar, and baking powder. Add the lard or butter cut into pieces and the lemon zest, working the mixture with your hands until it resembles sand. Add the eggs and mix until the mixture forms a smooth ball. Cover with plastic wrap and refrigerate for at least 30 minutes.
1. Sift the ricotta or mix it with a spoon to finely chop it. Add the sugar, chopped chocolate, cinnamon, and orange zest. Mix well until smooth.
2. Roll out the shortcrust pastry thinly and cut out circles about 10 cm in diameter. Place a spoonful of filling in the center of each circle, then fold in half and seal the edges well, perhaps using the prongs of a fork to create a decorative shape.
3. Cassatelle can be fried or baked. To fry, heat plenty of oil in a pan and fry the cassatelle until golden brown. Drain on paper towels.
4. For the baked version, arrange the cassatelle on a baking tray lined with baking paper, brush them with a little milk or beaten egg and bake in a preheated oven at 180°C for about 20 minutes or until golden brown.
