  • 0. Clean the shrimp, removing the legs, shells, and heads. If desired, leave the tails on only 8 shrimp, which will be used for the final garnish. Set aside the heads and shells. Remove the black vein and the intestines, which are located on the back of the shrimp, by making an incision with a small knife and removing them with a toothpick. Rinse gently and drain in a colander.
  • 1. Peel the carrot, celery, and onion. Pour about 1 liter of water into a pot and add the vegetables. Bring to a boil, season with salt, and cook for about 20 minutes. Pour a drizzle of extra virgin olive oil into a pan and brown the heads and shells over high heat. Add the toasted scraps to the broth and continue cooking for another 10 minutes or so. Strain the resulting broth.
  • 2. Pour a drizzle of extra virgin olive oil into a pan, lightly brown the garlic, add the prawns and cook for a minute.
  • 3. In a large, high-sided pan, melt a knob of butter, add the thinly sliced onion, and once it is golden, add the rice and toast it over high heat for about 3 minutes.
  • 4. Pour in the white wine, let it evaporate, and add the tomato pulp. Stir constantly and gradually add the broth as needed. Once the risotto has absorbed the broth, add more. After about 10 minutes of cooking, add the tailless shrimp, stir, and continue cooking, adding the broth. Once the risotto is well cooked and thickened, season with salt and pepper.
  • 5. Plate up and place two prawns with their tails on each plate, sprinkle with chopped parsley and serve.
