  • 0. In a large saucepan, heat the sesame oil and add the ginger, garlic, and halved onion. Sauté over medium heat for a few minutes until the vegetables begin to brown.
  • 1. Add the chicken or beef broth, 50 ml soy sauce, and 50 ml mirin. Bring to a boil, then reduce the heat and simmer gently for at least 1 hour, to concentrate the flavors.
  • 2. If you prefer a richer flavor, add miso paste. While cooking, skim off any impurities that float to the surface with a slotted spoon. Once cooked, strain the broth to remove the vegetables and set aside.
  • 3. Bring a small saucepan of water to the boil and cook the eggs for 6 and a half minutes, until they become soft and creamy.
  • 4. Immediately cool the eggs in cold water, carefully peel them, and transfer them to a bowl with the soy sauce, water, and mirin. Let marinate for at least 1 hour (you can also prepare them the day before for a more intense flavor).
  • 5. Cook the beef sirloin in boiling water for 10-15 minutes, until cooked through but still tender. Drain and let cool slightly, then slice thinly.
  • 6. In a pan, heat the soy sauce with the sugar and a little water. Add the beef slices and sauté for 1-2 minutes, allowing the meat to absorb the sauce's flavor.
  • 7. Cook the ramen noodles according to the package instructions. Drain and run under cold water to stop the cooking process.
  • 8. Add the cooked noodles to each bowl. Pour the hot broth over the noodles, covering them completely. Top with a few slices of beef, half a marinated egg, red onion, spring onion, and sliced chili pepper.
  • 9. Finish with a handful of fresh cilantro and a touch of hot oil or chili powder if you like a bolder flavor.
