  • 0. Heat a drizzle of oil in a saucepan and add the vegetables and cherry tomatoes, sautéing for a few minutes. Add the shells and heads, toasting them, crushing them lightly. Deglaze with the brandy and let it evaporate. Cover with water and add the parsley. Cook over low heat for 60 minutes. Strain through a fine sieve, pressing to extract all the juice. Keep the fish stock warm.
  • 1. Chop most of the shrimp, leaving 4 whole. In a pan with oil and a little butter, sauté them for 2–3 minutes. Season with salt and pepper. Set aside the whole ones and reserve the pieces for stirring.
  • 2. In a saucepan, heat a drizzle of oil with a knob of butter; add the shallot and sauté lightly. Toast the rice, add the wine, and let it evaporate. Begin adding the stock, a ladle at a time, stirring constantly and continuing to cook (about 16–18 minutes).
  • 3. When the rice is al dente, turn off the heat and stir in the shrimp pieces and cherry tomatoes. Add the lemon zest and a final knob of butter, and stir vigorously. Season with salt and pepper, add the lemon juice, and chopped parsley. Serve, garnishing each portion with a whole shrimp, extra lemon zest, and a sprinkling of parsley.
  • 4. The secret is in the rice stock: all you need is a creamy but not too thick one. Use Carnaroli rice and stir constantly off the heat for the perfect consistency. If you want to enhance the acidity, add an extra splash of lemon juice at the end.
