  • 0. If the sea bass is whole, wash it thoroughly, remove any entrails, and cut small slits in the skin (this will help it cook evenly). Place each sea bass on a sheet of parchment paper or heat-resistant baking paper (about 30 x 30 cm for each fish).
  • 1. Inside each sea bass, place 2-3 lemon slices, a sprig of thyme, a minced garlic clove, a drizzle of extra virgin olive oil, salt, and pepper. Wrap the sea bass tightly in parchment paper, creating a sealed parcel so that the fish cooks in its own steam.
  • 2. In a bowl, combine the red pepper strips, the green beans (blanched for 3 minutes), the red onion, and the rosemary. Season with extra virgin olive oil, salt, and pepper and mix well. Place the vegetables on another sheet of parchment paper and seal tightly, creating another parcel.
  • 3. Preheat the oven to 180°C. Place the sea bass and vegetables in foil on a baking sheet and bake for about 20-25 minutes. After baking the sea bass and vegetables, remove the foil and broil the fish for 3-5 minutes to brown the surface. This will crisp the skin and intensify the flavor.
  • 4. Carefully remove the foil packets, being careful of the escaping steam. Serve the sea bass directly in the foil (for a dramatic effect) accompanied by the foil-wrapped vegetables. If desired, drizzle with extra virgin olive oil and a squeeze of fresh lemon juice before serving.
  • 5. You can also add additional herbs, such as rosemary or oregano, to taste. If you like a little extra flavor, you can enrich the sea bass with a pinch of pink pepper or a few chopped capers.
