  • 0. Clean the mushrooms and slice them. In a large pan, heat a tablespoon of oil and add the crushed garlic and finely chopped shallot. When they begin to brown, add the mushrooms. Sauté for 5-7 minutes until softened.
  • 1. Season with salt and pepper, deglaze with a little white wine, and let it evaporate. Remove the mushrooms from the pan and set them aside.
  • 2. In a bowl, mix the cornstarch with a pinch of salt and pepper. Coat the pork loin slices evenly in the flour. In the same pan, add the remaining oil and butter and heat over medium-high heat. Cook the pork loin slices on both sides for about 2-3 minutes per side until golden brown.
  • 3. Pour the remaining white wine into the pan and let the alcohol evaporate. Add the vegetable broth and return the mushrooms to the pan. Cook everything together for 5-7 minutes, until the sauce thickens slightly.
  • 4. Serve the loin slices with plenty of mushrooms and the sauce, garnishing with chopped fresh parsley.
