Ingredients
- Pork loin600 g
- Field mushrooms300 g
- Extra virgin olive oil3 tablespoons
- Garlic2 cloves
- Cornstarch (Maizena)1 tablespoon
- Butter1 teaspoon
- White wine1 glass
- Shallot1 u (40 g)
- Parsleyto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Clean the mushrooms and slice them. In a large pan, heat a tablespoon of oil and add the crushed garlic and finely chopped shallot. When they begin to brown, add the mushrooms. Sauté for 5-7 minutes until softened.
1. Season with salt and pepper, deglaze with a little white wine, and let it evaporate. Remove the mushrooms from the pan and set them aside.
2. In a bowl, mix the cornstarch with a pinch of salt and pepper. Coat the pork loin slices evenly in the flour. In the same pan, add the remaining oil and butter and heat over medium-high heat. Cook the pork loin slices on both sides for about 2-3 minutes per side until golden brown.
3. Pour the remaining white wine into the pan and let the alcohol evaporate. Add the vegetable broth and return the mushrooms to the pan. Cook everything together for 5-7 minutes, until the sauce thickens slightly.
4. Serve the loin slices with plenty of mushrooms and the sauce, garnishing with chopped fresh parsley.
