  • 0. In a bowl, sift the flour and mix it with the baking powder and salt. Add the cold cubed butter and work it in with your fingertips until the mixture resembles sand. Gradually pour in the warm water and knead until you have a smooth, even dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
  • 1. If using fresh spinach, wash it well and sauté it in a pan with a drizzle of olive oil and garlic (if you like) for a couple of minutes, until wilted. If using frozen spinach, thaw it and squeeze it dry. In a bowl, mix the spinach, corn, black olives, and mozzarella. Season with salt and pepper and add a pinch of nutmeg, if desired.
  • 2. Preheat the oven to 180°C (fan assisted) or 200°C (static). Roll out the dough on a floured surface, shaping it into a disk that can cover the bottom and sides of a round baking pan (about 24 cm in diameter). Line the pan with parchment paper and place the rolled out crust on top. Spread the filling evenly over the crust, trying not to spill any excess liquid.
  • 3. Bake the savory pie for about 30-35 minutes, or until the crust is golden and crispy and the filling is well combined. Let it cool slightly before serving.
  • 4. If you prefer an even crispier crust, you can brush it with a little olive oil before baking. For a richer version, you can add a little grated Parmesan cheese to the filling.
