I broccoli e i peperoni, croccanti e colorati, vengono saltati in padella e conditi con una salsa gravy cremosa e senza derivati animali, a base di brodo vegetale, farina e lievito alimentare.

  • 0. Blanch the broccoli florets in boiling salted water for 2-3 minutes and drain immediately. In a large skillet, heat the oil and add the garlic (if using). Add the peppers and sauté for about 4 minutes. Add the broccoli and sauté everything together for another 3-4 minutes over high heat. Season with salt.
  • 1. In a small saucepan, heat the oil or margarine and add the flour. Stir vigorously to create a golden roux (1-2 minutes). Slowly pour in the broth, stirring constantly to avoid lumps. Add the soy sauce, nutritional yeast, smoked paprika, and pepper.
  • 2. Simmer for 4-5 minutes, until the sauce thickens. Add salt if necessary. For a deeper flavor, add a teaspoon of miso dissolved in a little hot water.
