Cerchi un piatto semplice, sano e ricco di sapore? Prova queste verdure saltate in padella con salsa gravy vegan: un’esplosione di gusto 100% vegetale, perfetta come contorno o piatto unico se abbinata a cereali o proteine vegetali. I broccoli e i peperoni, croccanti e colorati, vengono saltati in padella e conditi con una salsa gravy cremosa e senza derivati animali, a base di brodo vegetale, farina e lievito alimentare.
Ingredients
- Broccoli550 g
- Bell pepper440 g
- Vegetable broth250 ml
- Rice flour20 g
- Sesame oil15 ml
- Extra virgin olive oil15 ml
- Soy sauce8 ml
- Tamari sauce5 ml
- Nutritional yeast5 g
- Garlic1 clove
- Black pepperto taste
- Fine saltto taste
- Smoked paprikato taste
Procedure
0. Blanch the broccoli florets in boiling salted water for 2-3 minutes and drain immediately. In a large skillet, heat the oil and add the garlic (if using). Add the peppers and sauté for about 4 minutes. Add the broccoli and sauté everything together for another 3-4 minutes over high heat. Season with salt.
1. In a small saucepan, heat the oil or margarine and add the flour. Stir vigorously to create a golden roux (1-2 minutes). Slowly pour in the broth, stirring constantly to avoid lumps. Add the soy sauce, nutritional yeast, smoked paprika, and pepper.
2. Simmer for 4-5 minutes, until the sauce thickens. Add salt if necessary. For a deeper flavor, add a teaspoon of miso dissolved in a little hot water.
3. Pour the gravy over the sautéed vegetables or serve it on the side for those who prefer to adjust the amount to taste.
4. 🍽 Tips: You can add crispy tofu or tempeh for a complete dish. For an Asian twist, add a little fresh ginger to the vegetables. Also great with roasted or mashed potatoes!
