Seitan saltato con verdure fresche, un piatto vegano ricco di proteine e sapore, semplice e veloce da preparare per un pasto sano e gustoso!
Ingredients
- Seitan125 g
- Apple cider vinegar25 ml
- Zucchini2 u (400 g)
- Yellow potatoes2 u (400 g)
- Eggplants1 u (250 g)
- Cluster tomato1 u (200 g)
- Sesame seedsto taste
- Fine saltto taste
- Black pepperto taste
- Fresh mintto taste
Procedure
0. Start by dicing the seitan. Dice the zucchini as well and marinate the seitan in a bowl with the salt, zucchini, vinegar, and sesame seeds.
1. Meanwhile, wash and slice an eggplant. Place them in a large bowl and season with salt and a tablespoon of oil. Heat a griddle or nonstick pan and cook them on both sides over medium heat. Once done, transfer them to a plate.
2. While the eggplant is cooking, peel and dice the potatoes. Blanch them in salted water for about 8 minutes. Once cooked, drain and set aside.
3. Once the eggplant is cooked, sauté the potatoes in the same pan with a drizzle of oil and a pinch of salt for about 5 minutes. Once they're crispy on the outside and soft on the inside, set aside. Now cook the zucchini and seitan in their marinade over high heat. This will take about 10 minutes.
4. Meanwhile, dice the eggplant and sauté it in a pan. Prepare the bowl by adding the diced tomatoes, sautéed vegetables, and potatoes. Season with salt or, if you prefer, soy sauce, and a tablespoon of extra virgin olive oil.
