Procedure
0. Remove the outer leaves from the cabbage and set them aside. Cut the cabbage in half and remove the tough center part. Using a very sharp knife, slice it thinly. Alternatively, you can use a mandolin. Transfer it to a large bowl and season with salt.
1. Lightly pound the sauerkraut with a pestle, cover it, and let it rest for about half an hour. After half an hour, the cabbage will have released some of its moisture; transfer it to the fermentation jar.
2. Once you've filled the jar halfway, pound the cabbages again to press them down. Continue filling the jar completely, pounding occasionally to press the cabbages down. Finally, pound them well with the pestle.
3. Close the jar with its lid and pour water into the groove between the jar and the lid to seal it airtight. Let it ferment for at least a week before consuming; you can also extend the fermentation process to 6-7 weeks.
