- Yellow potatoes350 g

Procedure
0. To make the samosas, first boil the potatoes in boiling water until tender. Meanwhile, prepare the dough: combine the sifted flour, salt, and oil in a bowl, then gradually add the water and begin kneading until the dough becomes smooth and homogeneous. Cover the dough with plastic wrap and let it rest in the refrigerator for half an hour.
1. Now, focus on the filling. In a large skillet, sauté the garlic and ginger with a drizzle of oil, then add the sliced onion, chili pepper, and turmeric and stir to combine. Add the roughly mashed potatoes and cook for about 5 minutes, then add the peas and continue cooking for another 3-5 minutes. Turn off the heat and add the salt, cumin, and fresh coriander.
2. Take the dough, roll it out thinly, and cut out four equal squares, each about 10 cm on each side. Divide the filling into four equal portions and place it in the center of each square. Fold the dough over into a classic triangular shape, sealing the edges well.
3. In a large pan, heat plenty of seed oil for frying and when it reaches 160 degrees, dip one Samosa at a time, cooking them for about 3 minutes on each side.
