Procedure
0. Cook the chicken breast in lightly salted boiling water for about 20 minutes, until tender. Drain, let cool, then shred finely with a fork or your fingers.
1. Meanwhile, grate the carrot, cut the green apple into small cubes (and sprinkle it with lemon juice to prevent it from browning), the pepper into strips, drain the corn and peas.
2. In a large bowl, combine the shredded chicken, vegetables, apple, corn, peas, and raisins (if using). Add the mayonnaise and cream or yogurt, season with salt, pepper, and lemon juice. Mix well until the mixture is creamy but not runny.
3. Let it rest in the refrigerator for at least 15 minutes, preferably 1 hour: the flavors will meld better and it will be easier to serve.
4. Divide the salpicão into individual bowls (or even small glasses or mini bowls). Garnish each portion with crumbled chips and a sprinkling of fresh parsley. Serve cold or at room temperature.
