  • 0. Bring the vegetable broth to a boil. In a large skillet, heat a little oil and toast the rice for a couple of minutes. Add a ladle of hot broth and continue cooking the rice, gradually adding more broth, until it's cooked through (about 15-18 minutes).
  • 1. Once cooked, you can stir in a knob of butter and a spoonful of grated cheese to make the rice creamier.
  • 2. Rinse the spinach and drain well. In a pan, heat a drizzle of oil with the crushed garlic clove. Add the spinach and sauté for a few minutes until wilted. Season with salt and pepper to taste and remove the garlic before serving.
  • 3. Season the salmon fillets with salt, pepper, and herbs to taste (you can use parsley or dill). Heat a nonstick pan with a drizzle of oil. Cook the salmon for about 4-5 minutes per side, starting with the skin-side down if present. Cooking time may vary depending on the thickness of the fillets.
  • 4. Once the rice is ready and the spinach is sautéed, plate everything. Arrange a salmon fillet on each plate, add the spinach on the side, and serve with a portion of rice.
  • 5. You can add a little grated lemon zest to the salmon for a fresh touch. For a creamier touch to the rice, you can replace part of the broth with a little cooking cream.
