  • 0. Using a blender, I chop the garlic, onion, and chili pepper and sauté them in a saucepan with olive oil. I add a splash of water to prevent them from burning. Meanwhile, I chop the carrot and celery and add them after two minutes. Finally, I chop the tomato, roughly removing the seeds, as I don't like them.
  • 1. I put the pot of water on the stove to cook the pappardelle. Meanwhile, I add the chopped sausage to the pan. I try to remove the casing when possible. I brown everything together, then add the tomato, a pinch of salt, and a splash of water and cook over low heat.
  • 2. Once the pappardelle are ready, I drain them and serve them on plates. I top them with the sauce and sprinkle them generously with Parmesan cheese.
