- Dry biscuits125 g
- Jam125 g
- Fresh cream85 ml
- Butter50 g
- Granulated sugar40 g
- Gelatin sheets4 g
- Vanilla essence1 u
- Dark chocolateto taste
- Raspberryto taste
Procedure
0. Start preparing the cold cheesecake with the base: finely crush the biscuits with a mixer, place them in a bowl and mix them with the melted butter.
1. Soak the gelatin in cold water for about 10 minutes. In a bowl, beat the cream cheese with the sugar, 75g of cream, and vanilla essence until smooth. Pour the remaining cream into a saucepan and heat. Add the well-squeezed gelatin and stir until dissolved.
2. Let it cool and then add the mixture to the cream cheese mixture, mixing well. Pour the mixture onto the biscuit base, smooth it out, and refrigerate for an hour.
3. After this time, heat the raspberry jam in a saucepan with the water and lemon juice. Let it cool slightly and spread it over the cake. Refrigerate again for 1 hour.
