  • 0. In a saucepan, heat the extra virgin olive oil and sauté the onion over low heat until transparent.
  • 1. Add the chopped radicchio and sauté for 3–4 minutes, stirring, until softened.
  • 2. Add the rice and toast for 1–2 minutes, stirring constantly, until the grains become glossy.
  • 3. Add a ladle of hot broth and cook over medium heat, stirring frequently. Continue adding broth as it's absorbed, for about 15–18 minutes, until the rice is al dente.
  • 4. Turn off the heat, add the grated Parmesan cheese and stir well. Add the honey, a pinch of salt and pepper to taste, and mix gently.
