Ingredients
- Vegetable broth600 ml
- Carnaroli rice160 g
- Parmigiano Reggiano DOP40 g
- Golden onion1 u (150 g)
- Extra virgin olive oil1 tablespoon
- Radicchio1 u (250 g)
- Honey1 teaspoon
- Fine saltto taste
- Black pepperto taste
Procedure
0. In a saucepan, heat the extra virgin olive oil and sauté the onion over low heat until transparent.
1. Add the chopped radicchio and sauté for 3–4 minutes, stirring, until softened.
2. Add the rice and toast for 1–2 minutes, stirring constantly, until the grains become glossy.
3. Add a ladle of hot broth and cook over medium heat, stirring frequently. Continue adding broth as it's absorbed, for about 15–18 minutes, until the rice is al dente.
4. Turn off the heat, add the grated Parmesan cheese and stir well. Add the honey, a pinch of salt and pepper to taste, and mix gently.
